Wildweed grew like a seed in the sidewalk, slowly building our identity as we developed into the plant we are today.

While our restaurant is new, our history began a little while ago.
We started as a pasta pop up by David and Lydia Jackman in 2018. Over time we defined our style through over 225 pop ups including 2 full time residencies and a multi-state tour. Along the way we’ve built a very special team and a really special restaurant to call home.

We are fun-dining.
Freshly milled grain.
Hundreds of thousands of hand formed noodles.
A healthy obsession with ice cream.
Wines of terroir, cocktails of season.
Unique vegetables from friends who pour everything into their soil.
A community.
The celebration of the crossroads between time and place.
A canvas.
The endless search for flavors to paint with.
Whole animal butchery.
Delicate, intentional plates.
Wildcrafted ingredients captured at the peak moment.
Dishes that make you laugh.
Seeing ‘just how far’ we can push it.
We are Wildweed.

WIldweeD.
